Description

What kind of wine is it

Bonconsey presents a red wine made from Pinot Noir grapes, grown in the renowned Trentino region. The vinification process begins with fermentation in stainless steel, accompanied by frequent pumping over to ensure proper color extraction. Afterwards, the must undergoes malolactic fermentation in small wooden barrels. Maturation continues for fifteen months in barriques of different woods and ages, and then finishes with a period in stainless steel. The result is an elegant, compact glass of wine that offers a well-balanced structure and pleasant persistence.

Where does it come from

This Pinot Noir comes from small hillside plots located in the Trentino area. The vineyards reach up to 500 meters above sea level, an altitude that crucially preserves a marked finesse and great tasting precision. The bond with its native wine region guarantees great respect for the land and its specific characteristics. The origin from these limited parcels reflects careful and meticulous work, which focuses on selecting the grapes from the very first harvest stages in the field.

How is it produced

Production begins with a manual harvest of the bunches which, once in the cellar, are carefully destemmed. Alcoholic fermentation takes place in stainless steel tanks, where frequent pumping over helps set the wine's color. Once this phase is complete, malolactic fermentation occurs in small wooden barrels. The wine then matures through a 15-month aging in barriques made from different woods and with varying degrees of use. The final step entails a final blend in stainless steel before bottling, a choice that favors aromatic purity.

Tasting notes

In the glass, the wine shows a light ruby red color, hinting at its delicate and elegant visual profile. The bouquet offers intense fruity notes reminiscent of morello cherry, sweet cherry, and fully ripened wild berries. On the palate it is enveloping and compact; it retains a refined style and shows a continuous progression with each sip. Subtle savory and herbal notes blend perfectly with the structure and lead the tasting toward a persistent, clean finish that reflects its barrel aging.

Food pairing

At the table, it shows remarkable versatility and pairs harmoniously with savory yet delicate dishes like risottos or classic boiled meats. The balance between its fruity and savory elements also makes it ideal for grilled white meats. Thanks to its subtle herbal note and persistent finish, it enhances recipes where aromatic continuity is essential. It pairs beautifully with tagliolini with venison ragout, a traditional dish that highlights the wine's character without overpowering it.

When to serve it

It is the perfect choice for those seeking a Pinot Noir with a clear aromatic profile and solid flavor persistence. Its natural versatility makes it suitable for complex lunches and dinners, consistently accompanying the entire meal from appetizers to main courses. Its compact structure and fresh fruit notes are best enjoyed during moments of conviviality, where serving it by the glass emphasizes the nuances of morello cherry and sweet cherry, lifted by the final savory note.
