Description
The Trentodoc Brut Bonconsey is produced in Trentino from Chardonnay grapes grown at an average altitude of 600 meters above sea level.
This Classic Method of great elegance and clarity is crafted following a careful manual harvest. The grapes are destemmed and macerated with the skins for up to 12 hours before starting fermentation to obtain the base wine. The creation of the cuvée in spring allows the second fermentation in the bottle to start, followed by aging on the lees for 30 months.
With an intense straw yellow color, it features a fine and persistent perlage. On the nose, it is clean and harmonious, with notes of lime and citrus, followed by toasted almond and yeast hints. On the palate, it is crisp and structured, with returning tropical notes refined by field herbs and very persuasive in the long finish.
Ideal with raw fish, shellfish, cream of field risotto, it can also accompany fatty cheeses and savory first courses with white sauces.
