Fermentation at controlled temperature in stainless steel tanks guarantees a clean style, focused on freshness. After vinification, prolonged contact with the lees helps define its structure and extend its persistence on the palate.
Where it comes from
This wine originates in Umbria, in the municipality of Gualdo Cattaneo, from vines grown on the Perugian hills. The hilly position of the vineyards gives the grapes a distinctive and consistent character, true to the identity of a white wine that emphasizes precision. The strong bond with the land is revealed through an evident mineral note, making it an authentic and recognizable expression of its region of origin.
How it is produced
The manual harvest allows careful grape selection directly in the vineyard. After picking, Grechetto and Chardonnay grapes are gently pressed, followed by cold decanting of the must to achieve optimal clarification. Fermentation in stainless steel at low temperatures preserves the natural aromatic clarity. The process concludes with three months’ contact with the lees, giving balance without sacrificing freshness.
