Description

The Olpaio was born in the splendid vineyards of the Rubbia al Colle company, immersed in the splendid landscape of the Tuscan Maremma of Livorno. This wine is the perfect match between the territorial tradition and an American taste, increasingly influential on the market.

It is made by assembling Cabernet Sauvignon and Merlot grapes, selected and harvested by hand from three vines of the company. After a 10-day maceration on the skins and the fermentation phase carried out in steel and wood, the wine is left to rise for at least 12 months in French oak barriques. A further 12-month passage in large barrels follows, where the wine refines its organoleptic characteristics, oxygenating a little more. Finally, it is left in the bottle for at least 6 months before being marketed.

The Olpaio di Rubbia al Colle has an intense garnet red color. The nose reveals a good complexity, with aromas of ripe red fruits, followed by balsamic, floral and leather notes, with woody sensations in the background. On the palate it shows excellent softness and a good body, with refined and elegant tannins, with a persistent finish.

Excellent with grilled red meats and game, it also goes very well with very tasty and seasoned first courses.
