Description
This red wine is born in the heart of the Valencia region, specifically in the area of Fontanars dels Alforins, where the vineyards are located at 700 meters above sea level on calcareous soils with a sandy-loam texture. The Mediterranean climate, north-facing exposure, and the absence of irrigation contribute to an authentic expression of the territory. The vines, trained in the traditional bush system, have an average age of 60 years and produce Monastrell grapes harvested by hand in crates.
Vinification involves destemming and gentle pressing of the grapes, followed by an 18-day maceration in stainless steel tanks, with delicate pumping over and punch-downs to encourage extraction. The wine then matures for 12 months in concrete vats and for another 2 months in concrete containers, without fining and without cold stabilization.
Upon visual inspection, it displays an intense and deep color. On the nose, aromas of ripe red fruit, spicy notes, and hints of balsam emerge. On the palate, it is structured and harmonious, with well-integrated tannins, good freshness, and a long, enveloping finish on fruity and earthy tones.
It pairs perfectly with red meats, game, hearty stews, and aged cheeses.
