Description

Elio Ottin's Fumin is a wine produced in the municipality of Quart, in the Aosta Valley. The cultivation soil is silty-sandy with a notable presence of skeleton, ideal for the Fumin vine, from which the wine draws its distinctive character.

The harvest is manual, followed by a 3-week rest of the grapes in small drying boxes. Fermentation takes place in wooden vats with indigenous yeasts and a controlled temperature of 25-28°C. The refinement takes place for 8 months in steel, with a short final period in first passage wooden barrels.

This wine has an intense purple red color and violet reflections. On the nose it offers intense aromas of ripe red fruits and jam, enriched with toasted notes. In the mouth, it is well structured, soft and balanced, with a long and persistent finish.

It is particularly suitable for accompanying first courses with meat sauce and grilled red meats.
