Description
The Valpolicella Ripasso Classico Superiore Le Poiane was born in the selected vineyards of the Bolla company, located mainly in Jago and Crosara di Negrar, in the Verona area. This wine wants to represent the territory to which it belongs, highlighting the peculiarities of the land.
It is mainly produced with Corvina, Corvinone, Rondinella and other authorized grapes, harvested late at full maturity. At the end of February the wine is combined with the marc obtained from the racking of the best Amaroni and proceeds with a new fermentation. Fermentation, with this typical and ancient practice of Ripasso, takes 15-20 days and gives the wine great complexity and very soft tannins. Then the evolution takes place, first in barriques, then in large barrels for about 12-18 months. It follows refinement in the bottle for about 3 months before being marketed.
It has an intense ruby red color. The nose has an intense aroma of ripe grapes, to which are added spicy notes, with evident peppery sensations. In the mouth it shows a great body and a pleasant softness which gives it finesse and elegance. The finish is harmonious and velvety, with a good persistence.
This wine is perfect for moments of meditation, it also goes well with important dishes based on grilled red meats and aged cheeses.
