Description
What kind of wine is it
The Valpolicella Ripasso Superiore from Tenuta Casaletti is a red wine made from Corvina, Corvinone and Rondinella grapes. It shows a ruby-red color and a full, round and velvety profile, with a spicy, intense character. It is a red from Verona that owes its structure to the ripasso method.
Where it comes from
The grapes come from the Val d'Illasi, in the area of Verona, in Veneto. The soil is alluvial, with layered marine limestone rocks. Harvest starts at the end of September, with a double pass and sorting to ensure optimal ripeness of the grapes.
How it is made
The grapes undergo crushing and destemming, followed by a long maceration and fermentation. Then comes the ripasso: the wine is refermented on the Amarone pomace, which imparts structure and richness. Maturation takes place in oak casks and then continues in bottle.
Tasting notes
On the eye it is ruby red. The bouquet is spicy, distinctive and intense. On the palate it is full, round and velvety, with the hallmark softness of Ripasso and good length.
Food pairings
It pairs well with pasta dishes with mushrooms and ragù, grilled meats, game and roasts, as well as aged cheeses. Its full structure and smooth mouthfeel complement flavorful, slow-cooked dishes.
When to serve it
This is a red for convivial dinners and home cooking, when you want a full, rounded wine that is already a pleasure to drink.
