Description
The Ripasso Villa Annaberta by Cottini is made from the classic blend of Corvina, Corvinone, and Rondinella, and from a manual harvest, which usually takes place in the second half of September.
Upon arrival at the winery, the grapes are destemmed and gently pressed before moving on to fermentation, which takes place in stainless steel tanks and maceration under controlled temperature. This is followed by alcoholic fermentation, which lasts about 15 days at a controlled temperature of 20-24°C. Subsequently, the wine is separated from the skins through soft pressing and stored in steel tanks until the dried grapes for Amarone production are pressed. The wine is then "Ripasso" on the Amarone marc, where it remains for about 15 days at a controlled temperature of 24°C.
With an intense red color with garnet reflections, it offers a gentle nose with its complex aromas of wild berries, raisins, and figs. Full on the palate with soft tannins and a persistent aftertaste.
It pairs masterfully with important first courses such as stuffed pastas and meat dishes like roasts, boiled meats, and medium-aged cold cuts. Perfect with medium-aged cheeses.
