Description
What kind of wine it is
Cogito A by Mirizzi is a white wine made from organically grown Verdicchio grapes in the Marche region. Classified as Verdicchio dei Castelli di Jesi Classico Superiore, it stands out for its technical profile focused on aromatic definition and balance. Ageing on the lees in cement vats delivers a full and smooth style, maintaining a balanced freshness that authentically introduces the territory and the winemaking process.
Where it comes from
Production begins in Monte Roberto, in the renowned Castelli di Jesi area—a region in the Marche famed for its agricultural heritage. The vineyards are rooted in yellow marl sandstone soils characterized by a sandy consistency, a key territorial element that contributes to the wine’s clean and precise imprint. The identity of this label is deeply tied to a specific origin, able to authentically enhance the characteristics of the grape variety.
How it’s made
The grapes are carefully selected for a traditionally styled vinification. Fermentation takes place in cement vats, followed by eight months' lees aging, a deliberate choice to support its texture and gustatory continuity. The entire process occurs partially outdoors, with partially controlled temperatures, an operational method that ensures the regular development of the aromatic profile.
Tasting notes
In the glass, the wine shows a clean straw yellow hue. On the nose it opens with an intense and defined bouquet, where clear scents of hawthorn and bergamot stand out, enriched by hints of pineapple and custard. On the palate, the entry is full and smooth, supported by well-integrated freshness that ensures smoothness and a coherent finish.
Pairings
At the table, this white from Marche expresses its full potential with medium-structured seafood dishes, where the roundness of the palate blends with the natural savoriness of the ingredients. The suggested pairing enhances classic preparations such as tagliatelle with seafood, finding natural support in the wine’s fresh profile. It is also suitable for accompanying firm-fleshed fish like monkfish, thanks to a structure that complements compact textures without overpowering them.
When to serve it
It is the ideal choice to accompany a lunch or dinner based on fish, thanks to its precise and easy-to-read structure. Its refreshing texture makes it suitable both as an aperitif and as the main wine throughout the meal. Served at a chilled, appropriate temperature, it fully expresses all its aromatic potential, offering a tasting experience that highlights the purity of its fruit and aromas.
