Ereso by Can Rich is a white wine made from Malvasía cultivated in Ibiza. This wine has an elegant and savoury style, with a defined structure and smoothness balanced by the varietal freshness. Careful vinification and a short period of ageing in used French oak barrels ensure a clear and lingering sip, and the wine also offers good aging potential in the bottle.
Where it comes from
The grapes for Ereso come from the Buscastell estate, in the heart of Ibiza. The Mediterranean climate and well-drained limestone soils favour regular ripening and give a salty texture to the palate. The constant natural breezes help preserve grape health, which is crucial for a Malvasía-based white wine aimed at balance and aromatic precision.
How it is produced
The Malvasía grapes are harvested at optimal ripeness and immediately pressed. Fermentation takes place at controlled temperatures to enhance the aromatic profile. After fermentation, the wine matures for three months in used French oak barrels, however the woody notes never dominate, allowing the integration to offer roundness and gentle micro-oxygenation. The profile remains fragrant with a dry finish, and the varietal expression remains clean and continuous.
Tasting notes
Ereso shows a straw yellow colour with golden highlights. The nose reveals intense aromas of chamomile, dried fennel, apricot, peach and stewed apple, accompanied by delicate toasted notes. On the palate, it is full and slightly oily, with a pronounced savouriness that extends the sip. Persistence is long, with returning fruity and spicy notes, and the balance suggests good potential for positive evolution over time.
Food pairings
This wine pairs well with baked fish dishes, where its savoury character complements the juiciness and toasted notes enhance roasting flavours. It is also ideal with white meats and rich first courses such as pasta with creamy sauces or Mediterranean vegetables. In local cuisine, it is perfect with bullit de peix, while in the Spanish tradition, it matches a seafood paella thanks to its body and clean finish.
When to serve it
Ereso is suitable as a gourmet aperitif or for a full meal when you want structure without giving up freshness. Serve at 10–12 °C in a medium-sized glass to enhance its herbal and fruity aromas and the integration of the oak. With a few minutes of oxygenation, notes of chamomile and toasty character emerge further. The wine is enjoyable for its youthful fragrance but also shows good aging prospects.
