What kind of wine is it

Mirizzi's Extra Brut Metodo Classico sparkling wine is a white sparkling wine made from organically grown Verdicchio grapes. Produced using the Classic Method, it shows freshness and an elegant structure. The refermentation in the bottle and the long aging on the lees shape a complex aromatic profile, with a fine perlage that expresses vitality and aging potential.

Where does it come from

This sparkling wine comes from the Monte Roberto hills in the Marche region, at 300 meters above sea level. The vineyard, facing north, is cultivated according to the principles of organic farming and is a fine example of heroic viticulture. The area boasts a long history of white wines with a strong and well-balanced character.

How is it made

The grapes are hand-harvested at the end of August, selecting only the best bunches. The wine matures for ten months on fine lees with bâtonnage, enhancing complexity and structure. The secondary fermentation takes place in the bottle following the Classic Method, followed by thirty months of aging on the lees and a short rest after disgorgement.

Tasting notes

It appears straw yellow with greenish reflections and very fine perlage. The nose reveals bread crust, hazelnut, and a hint of vanilla due to the long contact with the lees. On the palate, it is dry and vertical, with pronounced acidity and citrus notes. The finish is savory and harmonious, with a freshness that invites another sip.

Food pairings

The Extra Brut Metodo Classico sparkling wine by Mirizzi pairs well with fresh fish dishes, shellfish, and mollusks; it enhances shrimp carpaccio and seafood risottos. It is also excellent with fresh cheeses such as goat cheese or salted ricotta. Among regional pairings, Marche-style fish stew finds a balance of acidity and savoriness. It suits seafood appetizers and steamed fish dishes.
