Brandy is the term generally used for distilled spirits made from grapes or other fruits, aged in oak barrels. The aging process determines its classification: AC brandy (aged for two years), VS, VSOP, and XO, which range from three to six years, and Hors d'Age brandies, aged for over six years in oak. Brandy is particularly popular in Italy, Spain, and France. French brandies with a designation of origin from Charente and Gascony are specifically known as Cognac and Armagnac, respectively. Brandy is typically enjoyed after meals or as a meditative drink. It can be the base for refined cocktails but also pairs beautifully with a fine cigar or a piece of dark chocolate.
