The Chianti Classico Il Palei of Villa a Sesta was born in vineyards located on the Sienese hills, in the municipality of Castelnuovo Berardenga.
It is produced with 100% Sangiovese grapes, harvested manually, then destemmed, crushed and placed separately in vats for vinification. The alcoholic fermentation takes place in about 7 - 10 days and the subsequent maceration on the skins lasts for another 10 days at a controlled temperature of 27°C.
