Florentine steak

Emblem of Tuscan culinary tradition, the bistecca alla fiorentina is a thick, imposing cut from the loin of a young steer, distinguished by the signature T-bone that separates the tenderloin from the sirloin. Traditionally sourced from prized breeds such as Chianina or Maremmana, it is cooked strictly rare over live wood embers, with no seasoning during cooking to highlight the pure, authentic flavor of the meat. The well-seared exterior crust and the extremely tender, juicy interior make this dish an intense taste experience, with the quality of the raw material taking center stage.

A dish of such structure and richness calls for full-bodied red wines with a good tannic backbone and adequate freshness to balance the meat’s juiciness. The ideal pairing remains the local match with the great Tuscan reds, such as a Chianti Classico Riserva, a Brunello di Montalcino or a Vino Nobile di Montepulciano. Beyond Italy, the fiorentina pairs wonderfully with the elegant structure of a French Bordeaux dominated by Cabernet Sauvignon or Merlot, with the spicy intensity of a Syrah from the Rhône Valley, or with the character of a Spanish Tempranillo aged in Ribera del Duero or Rioja Reserva.
