Among the traditional dishes that open the Easter lunch we find the fettuccine with lamb ragout , the cannelloni and the lasagna alla bolognese : first courses with a dense and inviting taste that find its right match in a strictly red wine, with a good structure with an evident acidity, with a long and persistent finish. Ideal candidates include Barbera , Chianti and Chianti Classico , Vino Nobile di Montepulciano , Montefalco Rosso or a Lambrusco . To accompany a vegetarian lunch with a wine, all those combinations that are ideal for cheeses and seasonal vegetables, such as artichokes and asparagus, should be taken into consideration. The savory taste of vegetarian cuisine meets in a perfect marriage fresh white wines such as the great Pouilly-Fumé or the elegant South Tyrolean Pinot Blanc .
