The wines to pair with buffalo mozzarella

The buffalo mozzarella from Campania is one of the best excellence of our dairy tradition and is the only mozzarella to have received the DOP recognition from the European Union. For its production, only whole fresh buffalo milk from certified dairies operating in the DOP area is used. The name mozzarella derives from the ancient gesture of the cheesemaker to "cut off" the mass of stringy pasta in small parts with his hands to make the various pieces of mozzarella. Once ready, the buffalo mozzarella is stored in the government liquid. It has a light white external film, smooth and a few millimeters thick. An Asprinio d'Aversa will be perfect with buffalo mozzarella, which with its fruity, citrusy bouquet and citrus freshness goes perfectly with the rich and soft taste of the cheese. Another wine that goes very well is a young Falanghina , from Benevento or Campi Flegrei , with fresh fruity and floral aromas and a lively final freshness.
