What kind of wine it is

Campo al Mare Metodo Classico Rosé Brut Millesimato is a rosé sparkling wine made from 100% Syrah, conceived to express delicacy and elegance from the very first sip. Its elegant character and contemporary stylistic approach define its profile, with a Brut dosage that enhances its finesse.

Where it comes from

The project bears the signature of Campo al Mare and fits into the winemaking journey of the Folonari family, whose history in the world of Italian wine spans several generations. It is born from the encounter between Syrah and an oenological style designed specifically for bottle fermentation, striking a balance between technical rigour and sensitivity in shaping the wine.

How it is made

After vinification of the Syrah grapes, the base wine undergoes secondary fermentation in the bottle according to the Traditional Method and rests on the lees for about forty-one months, a prolonged ageing that builds its aromatic depth. Disgorgement concludes a production process designed to accompany the wine’s slow evolution in the bottle.

Tasting notes

Pale, brilliant salmon pink in colour, animated by a fine, crisp and persistent perlage. The nose reveals secondary and tertiary aromas of bread crust and yeast, together with notes of ginger, old red rose and Mediterranean citrus. On the palate it is saline and crisp, with echoes of orange juice and a light minerality, enhanced by the absence of perceptible sugars; the body is slender and agile, with a balsamic breadth that lengthens the finish.

Food pairing

It pairs well as a characterful aperitif and elegantly accompanies raw fish and seafood starters, shellfish, sushi and delicate fish-based preparations. Its freshness also makes it suitable for light risottos and vegetable-based dishes.

When to serve it

Ideal as an aperitif and to open a fish-based meal, when an elegant, unobtrusive sparkle is desired. Serve at around 6–8°C, uncorking just before serving to fully appreciate its perlage and bouquet.
