The Brut by Bonconsey is a refined Metodo Classico produced in Trentino. Made from Chardonnay grapes, this sparkling wine stands out for its elegant profile and remarkable aromatic precision. The bottle refermentation and subsequent aging on the lees give this label a defined structure and a long finish, making it a clear and highly harmonious glass.

Where it comes from

This sparkling wine is born in Trentino, a region with a strong vocation for the production of sparkling wines. The Chardonnay grapes come from vineyards situated at an average altitude of six hundred meters above sea level, a key element that highlights the wine’s mountain origin. This altitude ensures a strong territorial identity to guarantee harvests aimed at the quality required for sparkling winemaking.

How it is produced

The process begins with a careful manual harvest of the grapes, followed by de-stemming and maceration in contact with the skins for up to twelve hours. After the base wine is fermented, in spring the cuvée is assembled for secondary fermentation in the bottle. The Metodo Classico is completed with aging on the lees for thirty months, which is essential to assure the optimal structure of its perlage.

Tasting notes

In the glass, it displays a deep straw yellow color, crossed by a fine and very persistent perlage. The bouquet is clean and opens with clear lime and citrus notes, then shifts towards hints of toasted almond and yeast. On the palate it is structured and crisp, offering pleasant tropical notes and nuances of wild herbs that lead to a remarkable aromatic continuity.

Pairings

Its clean nose makes it ideal to accompany raw fish dishes and delicate preparations based on shellfish. The balance on the palate perfectly enhances risotto with scampi cream and first courses enriched with flavorful white sauces. Thanks to its distinct structure, this wine can also successfully support and balance the tasting of rich cheeses.
