Description

Vernaccia di San Gimignano Selvabianca is a refined expression of this historic Tuscan grape variety. The grapes come from vineyards located between 250 and 360 metres above sea level, on soils of various composition ranging from sandy and rich in fossils to deep, medium-textured terrains.

The harvest is carried out by hand starting from the third decade of September, with a meticulous selection of the grapes. After a whole berry skin maceration and gentle pressing, fermentation takes place at a controlled temperature in cement and stainless steel vats. Ageing continues on fine lees until bottling, to provide greater structure and aromatic complexity.

It displays a straw yellow color with greenish reflections. On the nose, it expresses a crisp and mineral bouquet, with aromas of white-fleshed fruit, apple, lime, lily of the valley, thyme, and lemon balm. On the palate it is fresh, vibrant, and savoury, with a taut structure and a long, decisive finish.

Perfectly pairs with tartare, carpaccio, light first courses, fried dishes from land or sea, white meats, and roasts.
