The Volnay 1er Cru Les Caillerets from La Pousse d’Or is a red wine from Burgundy. Made from Pinot Noir grapes sourced from the En Caillerets parcel, it presents a broad, structured profile with notable density. The winery favors fermentation with indigenous yeasts and resting on fine lees in oak barrels, to preserve the integrity of the raw material and avoid filtration and fining.

Where it comes from

The vineyards lie in the heart of the Côte de Beaune, where the soil stands out for its high content of calcareous marl and clay. The vines benefit from an east-facing exposure at mid-slope, a position that ensures proper drainage and even ripening. Farming follows the principles of biodynamic viticulture and forgoes insecticides to enhance the authentic imprint of the terroir.

How it is made

Hand harvesting kicks off a meticulous process marked by careful selection and the destemming of the berries. The must undergoes a week of cold maceration to gradually extract the aromatic components before fermentation starts in the tanks. Aging continues for at least fifteen months in oak barrels in contact with the fine lees, naturally shaping the structure.
