Description
Gricos by Grifalco is a red wine made from 100% Aglianico grapes grown in vineyards located in the municipalities of Venosa, Maschito, and Forenza, in the heart of Vulture. The vines, aged between 10 and 30 years, are rooted in volcanic soil. Harvesting is done by hand with careful selection in the vineyard and a second sorting in the winery using an advanced linear destemming system, which allows only perfectly ripe grapes to be used.
Vinification involves gentle crushing and destemming, and fermentation in stainless steel tanks at a controlled temperature, never exceeding 28°C. After racking, the wine ages on fine lees in second-use American oak barriques and French oak tonneaux for a period ranging from 6 to 12 months, during which malolactic fermentation occurs. Subsequently, the wine is stabilized in stainless steel before bottling, followed by further bottle aging of at least 4 months.
In the glass, it shows a ruby red color with violet reflections. The bouquet is characterized by intense aromas of crisp red fruit, mineral and floral notes, cherry, and black pepper, with a subtle hint of underbrush. On the palate, it is elegant and well balanced, with a fine structure and vibrant acidity that enhances its drinkability. The finish is long and harmonious, with notes of graphite and spices.
It pairs perfectly with game dishes, braised meats, and aged cheeses, enhancing their complexity with its lively freshness.
