What kind of wine
Alta Langa Brut by Coppo is made from Pinot Noir grown in southern Asti. Produced using the Traditional Method, it displays a precise style and defined structure. At least thirty months of bottle ageing on the lees and the foam formation developed by the traditional method impart a balance between liveliness and finesse.
Where it comes from
The grapes come from the hills of Asti. The marl-clay soils and marine-origin gypsum rocks support varietal aromas and pronounced freshness, giving the wine a savory profile with a mineral character.
How it is made
Harvesting takes place in mid-August with manual selection to ensure optimal quality and ripeness. After gentle whole-bunch pressing, the must ferments in stainless steel at a controlled temperature. This is followed by foam formation in the bottle according to the Traditional Method and ageing on the lees for at least thirty months, which develops aromatic complexity and a fine, persistent perlage.
Tasting notes
On the eye, it shows a bright straw yellow color with greenish highlights and a fine, compact perlage. On the nose, hints of golden apple, bread crust, and yeast emerge (the latter drawn as plausible inferences based on the production method). On the palate, it is dry, fresh, and soft, supported by vibrant acidity and a clean, savory finish, striking a balance between freshness and complexity.
Food pairings
Pairs well with raw and cured meats, marinated anchovies, and seafood starters such as fried baby squid and steamed langoustines.
