Description
This Amarone Classico from Valpolicella is the result of years and years of experimentation and research by Allegrini, which has developed its own production style that maximizes the fruity component. It is an excellent example of tradition, territory, and rural wisdom.
It is primarily made from Corvina Veronese grapes, with additions of Corvinone, Rondinella, and Oseleta grapes, hand-picked in the second week of September and left to dry in a special fruit loft until December. The must ferments in stainless steel tanks at a controlled temperature of 18-22°C for 25 days. The wine ages in new barriques for 18 months and for a further 14 months in the bottle before being released on the market.
Dark ruby red in the glass, it features hints of ripe red fruit and light spicy notes. On the palate, it is deep and very full-bodied, with refined tannins that give strength and vigor, leading to a velvety finish with pleasant persistence.
Perfectly paired with braised dishes and grilled red meats, it also complements game, well-aged cheeses, and all the sweet-and-sour dishes of Asian cuisine.
