Description
The Assmannshäuser Höllenberg Spätburgunder Crescentia Trocken by Kloster Eberbach comes from the Kaiserstühl and Markgräflerland vineyards of Baden, located along the steep slopes of the Ahr Valley, and from some parcels of the Pfalz, one of the most renowned areas for the production of Pinot Noir-based wines. Absolute specialty, this wine is present in the wine lists of some of the most refined restaurants in Germany.
It is obtained almost exclusively from a clone of this variety, -Spätburgunder - with small additions of the early variant of Pinot Noir, - Pinot Madeleine or Frühburgunder, - which traditionally ferment in red, with maceration in contact with the skins. Follows medium-long term refinement in American oak barrels and barriques.
This wine is cloaked in a seductive ruby red glass. The nose gives off an intense aroma of black cherry and American cranberry, accompanied by touches of black pepper but also by aromatic herbs such as eucalyptus, mint and sage. It is characterized by a beautiful character and a full-bodied taste, hints of cherry and red fruit jam that close on a long spicy final persistence.
Ideal in combination with a game stew, it lends itself to accompany roasted pork and elaborate gourmet dishes garnished with balsamic vinegar.
