Description
The Barbera d'Alba Superiore Papagena is produced by Fontanafredda in the cru of Serralunga d'Alba, on a hill with unique geological characteristics, with Serravallian soils rich in limestone, sands, and layered marl. These terrains promote a deep root system and significant mineral extraction, giving the wine complexity, structure, and a distinct natural acidity.
The grapes are handpicked in small crates and undergo fermentation in stainless steel tanks with controlled temperatures from 24°C to 30°C, with daily pump-overs. After racking, the wine rests for a few days before being transferred into large oak barrels for aging for 12-16 months. After this phase, the wine is bottled and left to further mature in the bottle until it reaches optimal balance.
Visually, it presents a deep ruby red color with violet reflections. The nose is broad and complex, with aromas of ripe plum and cherry, accompanied by spicy notes of cinnamon and cloves. On the palate, the wine is full-bodied and rich, supported by vibrant acidity and smooth tannins. The long and savory finish recalls blackberry jam, offering an elegant and lingering closure.
It pairs ideally with stuffed fresh pasta, flavorful meats, and vegetables such as pumpkin, fennel, or radicchio, but it also surprises with international dishes like Swedish Kalops, Polish Żurek, Croatian Sarma, French Pierrade, Vietnamese Pho, and Indonesian Gudeg.
