How it is produced

Vinification takes place without crushing, selected yeasts or enzymes, in full respect of the original fruit. The must undergoes an initial cold maceration for five days, then completes a total skin contact of seventeen days. Subsequently, the wine matures for sixteen months in wooden barrels, with a portion of new wood allowing the structure to integrate harmoniously without altering its genuine varietal expression.
