Description
The Brunello di Montalcino from Villa da Filicaja originates from vineyards located on the southwest slope of the municipality of Montalcino.
It is made with pure Sangiovese grapes, hand-picked during the first decade of October. After destemming and crushing, alcoholic fermentation takes place in stainless steel tanks at a controlled temperature of 28-30°C with frequent pump-overs and delestage; maceration on the skins lasts about 25 days. After malolactic fermentation, the wine is placed in 30 and 50 hectoliter Slavonian oak barrels for 36 months. This is followed by blending and "resting" phases before bottling, which occurs in April-May. It is released to the market 9-10 months after bottling, to ensure proper gustatory and olfactory evolution of the product.
Bright ruby red tending towards garnet in color, it opens with a characteristic and persistent bouquet of cherries and wild berries. On the palate, it reveals itself as structured yet elegant, with a dense and velvety texture, and typical mineral notes of the terroir.
