Description

The Chablis Le Beaunois by Labouré-Roi is sourced from vineyards located on the hillsides along the Serein Valley, in the heart of the Chablis appellation. This is the largest area of Burgundy, with 3,712 hectares cultivated exclusively with Chardonnay, on Kimmeridgian soils that give the wines a typical minerality. The altitude between 180 and 260 meters and the southwest exposures promote a balanced ripening of the grapes.

After an extended pneumatic pressing, the must is statically clarified and fermented with selected yeasts in stainless steel tanks at 18-20°C to preserve the aromaticity. Malolactic fermentation is completed by January, followed by aging on fine lees for 6-8 months, with regular bâtonnage to enrich the structure and impart softness to the wine.

In the glass, it shows a bright and clear light straw yellow color. The bouquet combines white flowers and citrus on a mineral background of flint and white fruit. The palate is lively, light, and well-balanced, with a fresh attack followed by a pleasant roundness and a savory persistence.

It pairs perfectly with charcuterie, oysters, sweetbread vol-au-vent, grilled chicken, or cheeses like Gruyère.
