What Kind of Wine It Is
Champagne Brut Premier Cru Grand Réserve Vilmart & Cie is a structured wine born from a blend of Pinot Noir and Chardonnay sourced from Premier Cru vineyards. This product, with a fresh and balanced profile, is crafted following the strict Champenoise Method, designed to combine finesse and volume. Vinification includes a first fermentation in oak barrels and no malolactic fermentation, followed by a long aging on the lees in bottle to ensure a defined and persistent drinking experience.
Where It Comes From
Champagne from Vilmart & Cie originates in Rilly-la-Montagne, a village located at the foot of the Montagne de Reims. The hilly terrain grants the grapes a gradual ripening and preserves the fresh component that is at the heart of the house style. The historic cellars, deeply dug into the chalk, offer a naturally stable environment in terms of temperature and humidity. This optimal microclimate hosts the prolonged rest of the bottles and contributes to the wine’s aromatic definition.
How It Is Made
Production begins with a strictly manual harvest, where bunches of Pinot Noir and Chardonnay are carefully selected. Alcoholic fermentation takes place in oak barrels, a technical choice that brings roundness without overwhelming the varietal character. The must does not undergo malolactic fermentation and rests in the wooden barrels for about ten months. Afterwards, refermentation in bottle is carried out according to the Champenoise Method, with a rest of three or four years on the lees in the chalk cellars.
Tasting Notes
In the glass, it shows a pale straw yellow color, enhanced by fine and persistent bubbles that underscore its visual clarity. The nose is welcomed by an ample and varied bouquet, where hints of licorice harmoniously mingle with fruity notes of pear and peach. On the palate, it is fresh, balanced, and endowed with a pleasant taste tension. The tasting ends with a long finish, characterized by delicate pastry nuances resulting from the aging on the lees.
Food Pairings
Thanks to its structure and lively freshness, this Champagne precisely pairs with raw fish dishes, enhancing the savoriness of the seafood. The balance between taste tension and the roundness from the oak aging also makes it suitable for braised white meats. The fine bubbles cleanse the palate, an action that makes each sip harmonious and prepares the mouth to appreciate dishes of medium and defined structure.
When to Serve
It’s the right choice for moments when you wish for a fresh and precise glass, perfect for enriching an aperitif or accompanying main courses. The aromatic continuity and lasting flavor allow this wine to stand naturally on the table, served at a well-chilled temperature. Under these conditions, it clearly expresses its identity and reveals that combination of liveliness and roundness that distinguishes it from the very first sip.
