Where It Comes From

Champagne from Vilmart & Cie originates in Rilly-la-Montagne, a village located at the foot of the Montagne de Reims. The hilly terrain grants the grapes a gradual ripening and preserves the fresh component that is at the heart of the house style. The historic cellars, deeply dug into the chalk, offer a naturally stable environment in terms of temperature and humidity. This optimal microclimate hosts the prolonged rest of the bottles and contributes to the wine’s aromatic definition.

How It Is Made

Production begins with a strictly manual harvest, where bunches of Pinot Noir and Chardonnay are carefully selected. Alcoholic fermentation takes place in oak barrels, a technical choice that brings roundness without overwhelming the varietal character. The must does not undergo malolactic fermentation and rests in the wooden barrels for about ten months. Afterwards, refermentation in bottle is carried out according to the Champenoise Method, with a rest of three or four years on the lees in the chalk cellars.

In the glass, it shows a pale straw yellow color, enhanced by fine and persistent bubbles that underscore its visual clarity. The nose is welcomed by an ample and varied bouquet, where hints of licorice harmoniously mingle with fruity notes of pear and peach. On the palate, it is fresh, balanced, and endowed with a pleasant taste tension. The tasting ends with a long finish, characterized by delicate pastry nuances resulting from the aging on the lees.
