What type of wine is it?

Champagne Grande Réserve by Mademy is a white Classic Method sparkling wine from the Marne Valley, made from Chardonnay, Pinot Noir, and Pinot Meunier. This Brut stands out for its fresh and elegant style, with a fine and persistent perlage. Vinification involves fermentation in temperature-controlled steel tanks and bottle refermentation according to the champenois method, with aging on the lees for 18 to 24 months. The result offers balance, finesse, and a solid potential for evolution.

Where does it come from?

The vineyards are located in the Marne Valley, an area with soils of limestone, chalk, and marl. The humid continental climate, with significant temperature variations, favors slow ripening and aromatic consistency, and provides freshness and natural acidity. The clay-limestone soils add minerality and structure, while optimum sun exposure increases the wine's complexity. The winemaking history of Marne confirms this terroir as a benchmark for Champagne.

How is it produced?

Manual harvesting preserves the integrity of the grapes. After gentle pressing, the must ferments in steel tanks at controlled temperature. The secondary fermentation happens in the bottle using the champenois method, followed by aging on the lees for 18-24 months. Manual riddling and disgorgement are carried out with the addition of the liqueur d'expédition; a cork and wire cage complete the process, thus preserving the quality and finesse of the bubbles.

Tasting notes

To the eye, Champagne Grande Réserve Mademy shows a pale straw yellow color, with a fine and persistent perlage. The nose reveals notes of peach, pear, and citrus, along with hints of bread crust due to prolonged lees contact. On the palate, freshness blends with a creamy texture and touches of toasted almond and hazelnut; the mineral finish reflects the Marne's origin.

Food pairings

This Champagne pairs well with seafood appetizers such as raw shellfish and tuna tartare, and accompanies typical French dishes like gougères and quiche Lorraine. Excellent with Champagne risotto and langoustines, it also shows balance with sole meunière. For an international pairing, seafood paella highlights the acidity and delicacy of the bubbles.

When to serve it?

Champagne Grande Réserve by Mademy is ready to drink when young but can also evolve in the cellar for several years.
