This Champagne stands out for its freshness, moderate dosage and a fine, persistent perlage. It is made using the Traditional Method, with bottle fermentation and a long aging on the lees, enhancing the wine’s balance and elegance.
Where does it come from?
Produced in the Champagne region, this wine is made from grapes grown in the Côte des Blancs and the Montagne de Reims. The chalky soils and cool microclimate of the Côte des Blancs, together with the clay-limestone soils and elevations of the Montagne de Reims, promote a slow ripening of the grapes. These elements provide the wine with a refined structure and marked minerality.
How is it made?
Manual harvesting in crates preserves the quality of the berries. After gentle pressing, fermentation takes place both in stainless steel tanks and in oak barrels, adding aromatic complexity. The base wine is then bottled for the prise de mousse following the Traditional Method, with secondary fermentation in the bottle and aging on the lees for over three years. The final dosage is restrained to maintain the freshness and precision of its aromas.

In the glass, the Champagne appears straw yellow with bright highlights and a delicate, continuous perlage. The nose offers hints of white flowers, green apple and citrus, with light notes of bread crust from the prolonged lees aging. On the palate, it is harmonious and vibrant, with well-balanced acidity, a clear mineral hallmark and a soft, elegant finish.

Perfect as an aperitif, this Champagne pairs well with seafood dishes, raw fish and shellfish such as oysters and prawns. Its elegant structure also suits French preparations like gratinéed Coquilles Saint-Jacques. When to serve it
It is recommended to enjoy this Champagne within the first three years after disgorgement, when it best expresses its freshness and the finesse of its perlage. The prolonged lees aging ensures good evolution even up to five years. Serve at a temperature between 8 and 10 °C, avoiding sudden temperature changes to preserve the most delicate aromas.
