What kind of wine is it
The Champagne Extra Brut Cuvée Prestige by Erick Schreiber is a rigorous and structured expression, made from a blend of Pinot Noir, Chardonnay and Pinot Meunier. This Extra Brut dosage stands out for its elegant, refined and full-bodied style, delivering a long persistence on the palate. The bottle fermentation strictly follows the Champenoise Method, a choice that ensures consistent quality and a deep aromatic integration. The result is a glass with a precise technical profile, reflecting the care taken from the vineyard to the bottle.
Where it comes from
This wine is born in Courteron, in the Bar sur Seine area, set within the renowned Côte des Bar. In this particular part of Champagne, Erick Schreiber leads a pioneering approach to agriculture that is both rigorous and environmentally friendly. The estate's vineyards are all certified Demeter and are cultivated according to the principles of biodynamic agriculture. This deep connection with the land and its natural rhythms results in healthy and expressive grapes, which translate into a wine with intense aromatic definition and remarkable palate clarity.
How it is made
The base for this cuvée is formed by the careful vinification of Pinot Noir grapes, joined by Chardonnay and Pinot Meunier. Part of the wine matures in wooden barrels, a technical choice aimed at providing complexity without compromising the freshness typical of the denomination. The subsequent prise de mousse is carried out using the Champenoise Method, followed by a lengthy aging of eight years on the lees. This extended bottle-aging phase is fundamental for refining the fineness of the perlage and ensuring a continued aromatic evolution.
Tasting notes
In the glass, this Champagne displays a bright straw yellow color, with a fine and notably persistent perlage. The bouquet is clear and well-defined, revealing intense white fruit aromas, almonds, and honeyed notes. The palate reflects these aromatic promises, offering a sip that is elegant, full and highly refined. The flavor profile unfolds seamlessly and culminates in a long finish that highlights the pleasant dryness typical of this style.
Food pairing
The measured structure of this label makes it perfect to accompany a range of culinary preparations, starting from the aperitif moment. At the table, it harmoniously pairs with various cuts of white meat, the full spectrum of seafood cuisine, and soft cheeses. Thanks to its persistent finish, it also supports more intense seafood dishes with ease. Among traditional French pairings, it finds an ideal match next to oysters and bouillabaisse, as it enhances the ingredients without ever overpowering their flavors.
When to serve it
This Champagne is ideal at the start of a meal and during occasions that call for a clean, dynamic and well-structured glass. The prolonged aging on the lees ensures stable drinkability, making it suitable for enjoyment throughout the meal with fish-based or delicately flavored meat menus. To fully appreciate its intricate flavor profile, it is best served well chilled. This careful temperature management allows you to best highlight the fineness of the perlage and the constant elegance with every sip.
