Description

Bollinger Champagne Extra Brut RD is produced, only in the best vintages, from Pinot Noir and Chardonnay grapes from some of the most important Grand Cru and Premier Cru of Champagne: among these Aÿ, Verzenay, Bouzy and Tauxières for Pinot Noir, Le Mesnil-sur-Oger, Oger and Cuis for Chardonnay. The fermentation takes place exclusively in cask, followed by the second fermentation and a maturation on the lees which lasts for more than 45 months, a time 3 times longer than that required by the production specification.

The Champagne Extra Brut RD by Bollinger shines in the glass of a bright golden yellow color. On the nose it expresses a rich and complex bouquet, with notes of cooked ripe fruit, in particular quince, with a discreet hint of honey, followed by toasted notes of cocoa, anise and nutmeg. On the palate it is full and balanced, with a mineral and fresh finish, with a pleasant persistence.

Perfect to combine with all types of risotto, especially with mushrooms or truffles, it goes well with venison and medium-aged cheeses.

The abbreviation RD stands for "Récemment Dégorgé", recently blossomed; it is a legendary Vintage Champagne created by Madame Bollinger in 1967, in order to offer the opportunity to taste a champagne aged on the lees for a long time that still maintained an out of the ordinary freshness and aroma. Style icon, not surprisingly it was one of the favorite champagne of agent 007 James Bond.
