Description
The Chianti Classico Rubiolo by Gagliole is a red wine made exclusively from Sangiovese grapes sourced from vineyards located in Panzano in Chianti, Castellina in Chianti, and Badia a Passignano. The vineyards are situated between 350 and 450 meters above sea level, with south to southwest exposures, on clay-loam soils characterized by Pietraforte bedrock.
The grapes are hand-harvested in small crates and vinified with spontaneous fermentation using indigenous yeasts in stainless steel tanks. Maceration on the skins lasts for about 20 days, while maturation takes place for 10 months in a combination of used French oak barriques and concrete tanks, with the aim of preserving the identity of Sangiovese and the expression of its terroir.
In the glass it shows a ruby-red color, with an elegant, distinctly varietal aromatic profile marked by notes of red fruits, cherry, aromatic herbs, and delicate spicy nuances. On the palate it is fresh and balanced, with fine tannins, good structure, and a pleasant persistence that echoes the fruity and savory notes.
It pairs nicely with flavorful first courses, roasted and grilled meats, game, cured meats, and medium-aged cheeses.
