What kind of wine it is

Chianti Riserva del Conte by Villa da Filicaja is a Tuscan red made from Sangiovese and Canaiolo. It displays a solid structure and well-defined complexity. Fermentation takes place in stainless steel at a controlled temperature, followed by aging for one year in Allier oak barrels. The result is a full-bodied style, with fresh acidity balancing soft tannins and a harmonious profile.

Where it comes from

The vineyards of Villa da Filicaja are located in the heart of Chianti Classico, between 350 and 450 meters above sea level. The clay-limestone soils and presence of galestro give the wine minerality and structure. The Mediterranean climate, with significant diurnal temperature variation, promotes slow ripening of the grapes, enhancing aromas and freshness. The landscape features ancient terraces and century-old olive trees, typical elements of the area.

How it is produced

The grapes are harvested by hand in small crates at the beginning of October, with a selection of the best bunches. After further selection in the cellar, the grapes ferment separately in stainless steel for about 12–15 days with frequent pumping over. Aging continues for 12 months in Allier oak barrels, where micro-oxidation softens the tannins. This is followed by at least 12 months in the bottle, developing balance and complexity.

Tasting notes

In the glass, the wine shows an intense ruby red color with violet highlights. On the nose, notes of cherry and raspberry emerge, along with hints of dried flowers, sweet spices, and a faint nuance of licorice. On the palate, it is full and enveloping, with polished tannins and a solid structure supported by lively acidity. The finish is long and harmonious, with recurring fruit and a delicate toasty note.

Food pairings

Chianti Riserva del Conte pairs well with red meat dishes such as sliced beef, braised meats, and peposo, as well as stewed game like hare and wild boar. Among first courses, it is perfect with pappardelle in wild boar ragù or baked lasagna. Traditional Tuscan ribollita enhances the wine’s freshness, while aged cheeses like pecorino romano accentuate its savoriness.

When to serve it

This wine is ready about three years after harvest and shows great longevity if stored in a cellar at a constant temperature. The recommended serving temperature is 18 °C in large glasses to allow the complex aromas and structure to shine. It expresses its full potential between 4 and 7 years, when tannins, fruit, and woody notes reach optimal balance.
