Description
This red wine by Cataldo Calabretta is produced exclusively in the best vintages from selected Gaglioppo grapes sourced from a high-quality hillside plot, located in the historic area of Cirò Classico. The vineyard, trained in the bush system on clay-limestone soil, has an average age of 25 years. The grapes are hand-harvested in crates during the first decade of October, ensuring careful selection of the bunches.
Fermentation occurs spontaneously, with two weeks of skin maceration. The wine ages for a total of 36 months, following a structured refinement process in three phases: 12 months in Slavonian oak barrels, 12 months in cement tanks, and 12 months in bottle. This long evolution helps to best express the character of the Gaglioppo and the identity of the territory.
On the nose, it offers intense aromas of red fruits, spicy notes, and a hint of rhubarb. On the palate, it is structured and elegant, with well-integrated tannins and a pleasant freshness. The finish is long and persistent, with notes of licorice and cocoa.
It pairs perfectly with grilled or braised red meats, game, and blue-veined cheeses, enhancing their flavors with its structure and complexity.
