Isolano is a Sicilian white wine born from the collaboration between Dolce&Gabbana and Donnafugata, made exclusively from Carricante grapes. The meticulous winemaking aims to preserve the varietal's aromatic precision, with a maturation process designed to enhance its character. This period of aging, first in vats and then in bottles, results in a persistent style characterized by a pronounced volcanic minerality.
Where it comes from
This white wine is produced on the northern slope of the volcano, with vineyards located in the estate of the Municipality of Randazzo and other selected areas of the Etna denomination. The volcanic soil gives the wine a clear and distinctive mineral imprint, steering the aromatic profile toward notes reminiscent of flint. The particular exposure contributes to a crisp and vibrant expression of the grape variety and maintains a definite territorial freshness.
How it is made
The grapes are processed through a gentle pressing, a technique that allows the extraction of a clear must with the highest aromatic purity. The fermentation in stainless steel takes place at a controlled temperature, ensuring a precise and linear development of flavors. The wine is then aged for nine months in vats and completes its evolution with over fourteen months of bottle aging before being released.
