Description

What type of wine is it

Cuordilava is an Etna Rosso produced by Donnafugata, made exclusively from Nerello Mascalese grapes grown on the northern slopes of the volcano. This red wine combines meticulous vinification in steel with a lengthy maturation in wood, creating a fresh and enveloping profile distinguished by a well-defined elegance. Its creation celebrates the collaboration with Dolce&Gabbana and unites two Italian excellences that represent regional quality through a glass of great personality.

Where does it come from

The grapes come from the northern side of Etna, specifically from the areas of Randazzo and Castiglione di Sicilia. This particular wine-growing area is deeply marked by volcanic soil, rich in minerals, which unequivocally defines the wine’s identity and structure. The elevation and the unique mountain climate delay the vegetative cycle of the vine, ensuring the wine bears a clear territorial mark that enhances the Sicilian origin of this red grape variety.

How is it made

The production process begins with fermentation in temperature-controlled steel tanks, accompanied by maceration on the skins for about ten to twelve days to extract color and structure. Afterwards, the wine ages for more than twelve months in French oak barrels, a crucial step for achieving great balance and longevity in the final result. The long journey ends with at least twenty-four months of bottle aging, a prolonged rest that perfectly integrates the aromatic components before consumption.

Tasting notes

In the glass, it presents a bright ruby red color, heralding a complex and deep bouquet. The nose reveals clear aromas of plum and ripe red fruits, enriched by delicate floral notes of lavender and typical woodland scents. On the palate, it is fresh and pleasantly enveloping, with an elegant texture that guides the tasting progression towards a persistent and clean finish, in perfect harmony with the initial aromas.

Food pairing

Its lively character makes it ideal for dishes with bold flavors such as hearty legume soups and red meat-based preparations. The pairing with dishes enriched by stewed mushrooms is particularly successful, as it perfectly echoes the woodland memories present in its aromatic array. It also works very well with local classics like pasta alla Norma, since it perfectly balances rich ingredients with its remarkable freshness.

When to serve it

This red is the perfect choice for important social occasions, as it accompanies a full meal with ease without being heavy on the palate. The extended maturation in wood and glass suggests enjoying it slowly, allowing the wine to reveal its aromatic evolution in the glass. It excels during well-prepared lunches or dinners, where it can highlight the purity of each sip and the elegance of its persistent and structured finish.
