What kind of wine is it
Franciacorta Brut Millesimato Lo Sparviere is a Franciacorta made from Chardonnay, offering a fresh and elegant profile with a well-defined persistence. The style is linked to processing with the Traditional Method, with secondary fermentation in the bottle and a long period on the lees that supports the flavor structure.
Where it comes from
It is produced in Provaglio d’Iseo, in Lombardy, from vineyards facing southwest at 180 meters above sea level. The silt and red clay soils lend structure and precision, maintaining a balance consistent with the Brut character.
How it is made
The grapes are chilled before gentle pressing, from which 55% of free-run must is obtained. Fermentation takes place in stainless steel at 15–17°C and a portion of the wine undergoes malolactic fermentation. The base wine matures for 6 months on the lees in steel, then completes bottle fermentation and continues with 48 months of bottle aging on the lees.
Tasting notes
In the glass, it shows a straw yellow color with golden reflections and a fine perlage. The nose recalls biscuit notes, acacia honey, candied fruit, and beeswax. The sip is fresh, slightly citrusy, and finishes with an orderly persistence.
Food pairings
It pairs well with creamy risottos, baked pastas, and raw seafood. Its freshness and persistence go hand in hand with creamier dishes and help keep the palate clean, without overpowering the delicacy of fish.
When to serve it
Perfect from aperitif to meal, when you want a Franciacorta with a clear profile and a recognizable period on the lees. Served chilled, it enhances the perlage and the biscuit notes that gradually unfold in the glass, maintaining a taut and precise drink.
