Description
Alma Assemblage is a Franciacorta Extra Brut from Bellavista, mainly produced from Chardonnay grapes, with the addition of Pinot Noir and a small percentage of Pinot Blanc. The grapes come from selected vineyards in the best parcels of the estate, with vines averaging 27-28 years of age.
The harvest is manual and takes place between August and September. The free-run juice is obtained through gentle pressing, with aging on the lees for about 30 months and some of the wines aged in oak barrels to add complexity. Disgorgement is scheduled for May, and remuage is performed manually, thus completing a careful and artisanal winemaking process.
With a bright yellow color, it offers a fine and persistent perlage. On the nose, it presents a delicate bouquet of Mediterranean flowers enriched by lively citrus notes. On the palate, it reveals itself as dynamic, with a mineral finish that provides depth, highlighting a harmonious structure and a perfect balance between freshness and maturity.
This Franciacorta is ideal as an aperitif and pairs perfectly with fish dishes, shellfish, and fresh cheeses.
