Where it comes from

The grapes are sourced from the specific Les Evocelles plot, spanning about three hectares and characterized by vines of varying ages. Its hillside location with a southeast exposure ensures excellent sunlight, which delivers optimal and even ripening throughout the vineyard.

How it's made

Production begins with a five-day cold maceration designed for gentle extraction of the wine's noble elements. This is followed by a seventeen-day fermentation without added yeasts or enzymes, preserving the essence of variety and place. The wine ages for fifteen months in wooden barrels, some of which are new, using oak selected from the nearby Cîteaux forest. A final month in stainless steel tanks allows the wine to stabilize naturally before bottling.
