Description
What kind of wine it is
Gevrey-Chambertin Les Evocelles from Domaine de la Vougeraie is a red wine made from Pinot Noir that expresses the distinctive character of its namesake Burgundy appellation. The result is a wine with a structured and elegant profile, featuring crystal-clear fruit, a refined tannic texture, and well-defined freshness. Every stage of production aims to enhance the unique qualities of the grapes, preparing the palate for a clear and profound reading of its terroir.
Where it comes from
The grapes are sourced from the specific Les Evocelles plot, spanning about three hectares and characterized by vines of varying ages. The soil rests on a limestone matrix, topped by a balanced mix of clay and silt. This unique geological composition contributes structure and a high degree of flavor precision to the final wine. Its hillside location with a southeast exposure ensures excellent sunlight, which delivers optimal and even ripening throughout the vineyard.
How it's made
Production begins with a five-day cold maceration designed for gentle extraction of the wine's noble elements. This is followed by a seventeen-day fermentation without added yeasts or enzymes, preserving the essence of variety and place. The wine ages for fifteen months in wooden barrels, some of which are new, using oak selected from the nearby Cîteaux forest. A final month in stainless steel tanks allows the wine to stabilize naturally before bottling.
Tasting notes
In the glass, it shows a ruby red hue, introducing a complex bouquet rich in nuances. The aroma blends intense fruit notes of blackberry and cherry with deep earthy accents, accompanied by a delicate spiciness typical of Gevrey-Chambertin. On the palate, it offers a harmonious, lively entry supported by balanced tannins and a vibrant acidity that keeps the wine energetic. The persistent finish is clean and balanced, with clear echoes of the dark berries on the nose and a pleasant spicy finish.
Food pairings
This red pairs beautifully with red meat dishes and is equally at home with game. Its spicy character and notes of small dark fruits echo the complex flavors of searing and rich cooking juices. It finds an ideal match in slow-cooked recipes, like braises or stews, which meld seamlessly with its harmony and texture. Finally, a selection of aged cheeses with a bold flavor will stand up to its aromatic notes, supporting its intensity and measured structure.
When to serve
Its great finesse makes it the perfect choice for special dinners where you want to bring a distinguished and profound wine to the table. It suits formal occasions and is ideal for moments spent savoring and analyzing each sip. Thanks to its excellent acidity, it offers a clear profile whether enjoyed immediately or after careful bottle aging. Pouring it in the glass guarantees a complete and satisfying experience, ready to enhance a structured menu with an enduring and balanced taste.
