Description
Perdixi is obtained from the union of two Sardinian vines with a strong personality, the Bovale from the Anfiteatro vineyard and the Carignano from the Ruina Figu vineyard, which bring nuances, complexity and structure to the wine.
Vinification: after destemming and soft pressing, the grapes are transferred to underground amphorae for fermentation, with a maceration on the skins which lasts for 30 days. Once the malolactic fermentation is over, the wine rises partly in cask and partly in tonneaux for 12-14 months. Bottle aging follows for about 3 months.
Wine with a ruby red color, the nose presents a mix of black fruits in alcohol that combines with a spiciness reminiscent of licorice and vanilla, achieved by an elegant balsamic. The mouth reveals excellent freshness, with a dense and well blended tannic texture.
Perfect to accompany red meats and game, it is ideal in combination with aged cheeses.
