Description
The Nuits-Saint-Georges produced by Labouré-Roi is a Pinot Noir with a strong personality; the vineyards extend over variable soils and orientations, with exposures to the east and southeast and an altitude reaching 330 meters.
The vinification involves destemming of the grapes, followed by a cold maceration for 3-4 days before alcoholic fermentation, which lasts 15 days with daily pump-overs and punch-downs. The wine is then aged on fine lees in barrels, 30% of which are new, for a period of 12-15 months, with complete malolactic fermentation.
In appearance, it shows a deep ruby red with violet hues. The nose is powerful and rich, with spicy notes and red fruits. On the palate, it is round and complex, with firm and elegant tannins that accompany aromas of dark fruits and a subtle woody finish.
It pairs wonderfully with game, duck, roasted or sauced red meats, and is also suitable for aperitifs or with a cheese like Coulommiers.
