How it’s produced
Vinification starts with destemming and a three to four day cold maceration, followed by a fifteen-day alcoholic fermentation with daily punch-downs and pump-overs. Once malolactic fermentation is completed, the wine matures on the fine lees in barriques, a portion of which are new wood. This aging process, which lasts between 12 and 15 months, enriches the aromatic profile and integrates the overall structure.
