Description
The Passerina Brut Jajà by Fontezoppa is a dry sparkling wine made from Passerina grapes grown in the hilly vineyards of Civitanova in the Marche region, at an altitude of 150 meters above sea level. A lively and modern expression of the territory, this wine is crafted using the Charmat method, ideal for enhancing the freshness and fragrance of the native Marchigiano grape variety.
The winemaking process involves whole bunch pressing, followed by static settling and the initiation of alcoholic fermentation with selected yeasts. The sparkling process occurs in autoclave, following the Charmat method, with subsequent refinement in bottle for three months to harmonize the aromatic profile and improve bubble integration.
In the glass, it presents a bright straw yellow color and a fine, persistent perlage. The aromatic profile is fresh and floral, with hints of citrus, green apple, and subtle herbal notes. On the palate, it stands out for its liveliness and pleasant acidity, well-balanced by a moderate sugar residue that gives roundness and softness.
Ideal to pair with seafood appetizers or light fried foods.
