Description

Kate is an organic Sauvignon Blanc produced by Aubert et Mathieu, which stands out for the lively and exotic character of the grape variety.

The winemaking process involves night harvesting to preserve the freshness of the fruit, complete destemming, and fermentation in temperature-controlled vats with aging on fine lees, techniques chosen to ensure freshness and aromatic cleanliness.

It has a straw yellow color with greenish reflections and offers on the nose pleasant notes of exotic fruit, citrus, white flowers, and a green herbal touch like asparagus. On the palate, it is tense and slender, with vibrant acidity and a flavor profile ranging from grapefruit to herbal notes and a slightly mineral finish.

It pairs perfectly with asparagus risotto or grilled shellfish, creating an elegant and harmonious balance.
