Description

Portofino's Classic Method Abissi di Bisson is a sparkling wine that comes to life in Pestella, in Trigoso di Sestri Levante, in the province of Genoa.

It can be produced with Bianchetta Genovese, Vermentino or Pigato grapes depending on the vintage, harvested early by hand. After fermentation which takes place in temperature-controlled steel tanks, the base wine is sent to the second fermentation which takes place by immersion in stainless steel cages, at a depth of 60 meters in the depths of the Bay of Silence of Sestri Levante. Stop for 18 months at a controlled temperature of 15 ° C before being fished out and subjected to the traditional disgorgement without any dosage.

It is characterized by an intense straw yellow color and a fine and persistent perlage. On the nose it releases a bouquet with a character that ranges between musk and brackish. On the palate it is dry and long, pleasantly mineral.

Ideal throughout the meal, this Pas Dosé is excellent in the company of refined fish dishes.
