Description

What kind of wine is it?

This organic red wine is a faithful expression of Primitivo, crafted by Botter. In the glass, it stands out for its structured style, characterized by ripe fruit and distinct spicy notes. The production process involves precise temperature-controlled maceration and ageing in steel and in barrels, resulting in a consistent and enveloping sip.

Where does it come from?

This wine originates in Puglia, a benchmark region for the Primitivo grape. Its strong regional identity enhances the natural qualities of the grapes, focusing on perfect fruit ripeness and a pronounced aromatic intensity. The southern Italian climate shapes a distinct tasting profile, instantly recognizable from the first sip.

How is it made?

Primitivo grapes are vinified using the submerged cap system to optimize extraction from the skins. The maceration lasts about two weeks at a maximum temperature of 25°C, fixing color and aromas. The subsequent resting involves a double ageing in steel and inside barrels, ideal for integrating fruit with pleasant toasted notes.

Tasting notes

In the glass it reveals an intense purple color anticipating a clear and rich bouquet. Aromas of cherry and plum jam emerge, accompanied by hints of tobacco, coffee, and vanilla. On the palate, it is well-structured, balanced by a fine texture of silky tannins leading to a long finish that harmoniously fuses ripe fruit and spicy notes.

Food pairings

Ideal with roast meats and grilled dishes, where the wine enhances the succulence of the food. It pairs well with dishes featuring intense cooking, creating echoes of coffee and tobacco notes. Served alongside an oven roast, it offers gustatory balance and rewards the palate with a long finish reminiscent of the density of ripe fruit.

When to serve

Perfect for accompanying lunches and dinners focused on meat to ensure a full and enveloping tasting experience. The balance of tannins, shaped by ageing in steel and barrels, allows for easy and convivial drinking. It can be enjoyed immediately or left to evolve for some time, to appreciate a more refined spicy component.
