Description
Produced from one of the oldest estates of the Guímaro family in Ribeira Sacra, Finca Pombeiras is a wine created to express the identity of the region and the respect for tradition. The grapes come from over 70-year-old vines, located at 350-400 meters above sea level, facing south and rooted in slate and granite soils, which contribute to its structure and minerality.
The harvest is manual and carried out in small crates. Spontaneous fermentation takes place in open barrels, with manual punch-downs twice a day. After 20 days, the batch is racked and homogenized, and malolactic fermentation begins. Once this process is complete, the wine remains on the lees for 30 days, then is transferred to French oak barriques for a minimum aging of 10-12 months. Subsequently, it stays in the tank for 2 months before bottling, which is done without filtration or fining, followed by an additional 5 months of bottle aging.
In the glass, it shows a deep garnet color. The bouquet is complex, with notes of ripe red fruit, aromatic herbs, sweet spices, and mineral hints. On the palate, it is elegant and layered, with good tannic structure, balanced acidity, and long persistence, reflecting the craftsmanship and richness of the original vineyard.
Ideal with game dishes, braised meats, or mature, characterful cheeses.
